Lemon-Garlic Salmon

 
Ingredients (in order of appearance):
  • 1 Tbsp. butter/margarine
  • 1 Tbsp. extra-virgin olive oil
  • 3 garlic cloves, minced
  • 2 tsp. lemon pepper seasoning
  • 1 lb. fresh salmon
  • salt
In a large skillet, heat olive oil and butter over medium-high heat. Stir in garlic. If your salmon is not pre-cut into 3-4 fillets, slice them up into 3-4 portions. Sprinkle both sides with lemon pepper seasoning and salt.
 
Place salmon fillets in the pan and cook on both sides for about 4-6 minutes per side until fish flakes when tested with a fork. If your fillets are thick, you may need to cover the skillet and allow it to cook for an extra minute or two to ensure it is cooked throughout. Serve!
